Chia seeds and mango pudding

A simple mango chia pudding to satisfy your summer cravings

  • 1 x can light coconut milk 
  • Enter text here
  • 5 tablespoons chia seeds 
  • 1 tablespoon liquid sweetener 
  • 1/2 ripe mango 
  • 1/2 teaspoon pure vanilla extract 
  • Tiny pinch kosher salt  
  • Toppings of choice mango and grapes


  • In a blender combine, coconut milk, mango, vanilla and sweetner of your choice. 
  • Blend until combined. 
  • Pour the liquid mixture In a medium mixing bowl stir add salt and  chia seeds and mix well so that the chia seeds are evenly distributed throughout.  
  • Cover and refrigerate for at least 30 minutes for better results. 
  • Once out of the fridge add your other half of mango and grapes for topping.
