Crunchy Choc Nut cookies

Ingredients

    Dry:

    • 2 cups all-purpose flour
    • 1 cup of coconut or brown sugar
    • 1/4 cup of mixed nuts roughly crushed
    • 100 g of dark chocolate roughly crushed
    • Pinch of salt
    • 1 teaspoon baking soda

    Wet:

    • 1/2 cup plus 1 tablespoon coconut oil
    • 1/2 cup of water
    • 1 teaspoon vanilla extract

    Instructions

    • Preheat oven to 180.
    • Spray your baking tray.
    • In a mixing bowl add in all the dry ingredients.
    • Add in the wet ingredients and mix until you have cookie dough.
    • Roll about 1 tablespoon of the mixture into balls.
    • Place onto the baking tray and flatten with a fork or your hand.
    • Bake in the oven for about 18-22 minutes.
    • Place on a cooling rack to harden
